01 / ABOUT THE PLACE

About this place

Deeply baked crusts with an inviting aroma and robust, wheaty depth define the loaves at Le Ressort, a bakery situated a short walk from Komaba-Todaimae Station. The shop has earned a steady following for the structural quality of its dough and the focused flavor combinations baked into it.

The bakery's best-known creation is the pistachio cream baguette displayed in the pastry counter. Sliced into a crisp, cleanly yielding mini-baguette, the rich green cream is flecked with finely crushed nuts for texture, letting its rich flavor interplay with the hearty grain profile of the loaf. Alongside the classic milk baguette, it remains a favorite choice for those seeking a sweet bake.

Savory selections are equally substantial. The mentai baguette and mentai focaccia, both loaded with spicy pollack roe inside dough with a crisp exterior and springy crumb, make for hearty, flavorful eating. Other loaves, such as the Fougasse 5 Fromages packed with varieties like blue cheese, an olive fougasse, and a savory hot dog accented with roasted onion, pair naturally with a casual meal or evening drinks.

There is no eat-in dining area, with the shop operating entirely for takeout. Facing the open baking workspace, the counter displays tartines, sandwiches, and baked confections intended to be taken home and enjoyed at leisure.
